I chose to make semi-briochy buns. I make one batch per week, freeze half for the other week. Thursday is Burgersday.
This makes about 8-10 buns whole, or 4-5 buns for half a batch.
- 2 tsp dry yeast in 250g milk with 25-30g sugar, warm a few minutes at 37°C / 99F
- 1 tsp salt (to taste)
- add 100g butter, 2 eggs and 500g flour
- knead 4 minutes
Let it rest for ~1h30.
Cut in half, wrap and freeze. The other half is cut in buns, knead them a bit to remove big bubbles and form the buns.

Let it rest for ~45m

Cook 15-20 min at 375F / 190°C
For the frozen one: thaw on the counter 3-4 hours prior. Once thawed, cut and form the buns, remove bubbles if needed. Let it rest for 30-45min and cook.
